A Love Letter to New Orleans

I’ve been accused of being a “California chef.” My affinity for surfing, my infatuation with the fresh produce, and my fascination with the landscape where the mountains meet the sea have made the Golden State an easy place to settle. But while I adore all of the above enough to make California my home for the past twenty-five years, my heart still lives in New Orleans: In the condensation that forms on the cold glass of an afternoon porch drink. In the sweaty bars at three o’clock in the morning during the weekend of Jazzfest. In a second line behind a marching brass band. In choking on powdered sugar from inhaling beignets too quickly. In the piles of crayfish, crab, and shrimp stacked on top of newspapers with a trash can nearby for the remnants. In people’s willingness to strike up a conversation with a stranger, free from judgment or expectations, and full of curiosity.

I owe everything I have to New Orleans and its people. It was when I moved there as a teenager that I truly discovered food and the culture that surrounds it. It was there that I first worked in a kitchen. And where I first learned to cook. The city forever altered the trajectory of my life. I haven’t lived there for a long time, but to this day, with no waves to surf or coastline to admire, it still feels like home.

You’ll find small pieces of NOLA scattered throughout this book, mostly in the drinks section (if you don’t know by now, the people of New Orleans know how to have a good time). If I had to pick a standout, though, my jambalaya recipe is my personal love letter to the city.
